Sunday Dinner

Today I decided it was time I was a good wife and mother! I fixed a nice Sunday dinner, complete with the good china and a tablecloth! It felt pretty good! And tasted even better! It was made all the more satisfying because the weather has definitely turned fall-ish. We watched the rain stream down during Meeting and I was very glad to know that soon we would sit down to a home-cooked meal around the table and wouldn't have to venture out into the weather until later this afternoon. Gospel Meetings start today and coffee surely beckons, as does a quick visit to a friend's! Her daughter just had a baby a week or so ago, so I'll stop by and visit them all, sharing the Summer Fruit Upside Down Cornmeal Cake that I made last night! For lunch today we had ham, the potatoes that are the leading picture to this post, fresh broccoli and fresh green salad. I got the recipe for the potatoes from a DeMarle At Home catalog. They make the most fantastic glass-infused silicone bakeware imaginable! It's super floppy, but nothing sticks! This recipe calls for the cheese to go on the bottom as you layer (thus the great golden-brown crispy cheese that you see!) the potatoes and yet, this is as bad as the pan gets!! With really no effort at all, it cleans up just like this with only a few small water droplets that need to dry!! I LOVE this stuff! But, the recipe for the potatoes is still worth sharing, you'll just have to be sure to grease your pan sufficiently so they'll not stick!

AuGratin Potatoes
6 small to medium potatoes, thinly sliced
3 Tbs. butter, divided
2 c. shredded cheese (I used reduced fat and it works ok!)
1 Tbs. rosemary, crushed (this can be VERY overpowering, use at your discretion)
Salt
Pepper
Garlic powder
green onions, sliced, if you like
¾ c. milk, boiling

Put 1/3 of cheese on bottom of pan, top with 1/3 of the potatoes, sprinkle with spices and green onions, if using. Dot with 1 Tbs. butter. Layer with next 1/3 of cheese, 1/3 potatoes, more spices and green onions, another 1 Tbs. of butter, ending with potatoes and butter. Pour boiling milk over top. Bake at 425ยบ for 45 minutes. Let stand 15 minutes and dump out onto serving plate. Enjoy!!
