What goes with coffee?


What are you having with your coffee this morning? Or maybe later this afternoon? After dinner with friends? Here are a few recipes you might want to try!


Easy Breakfast Rolls
Begin these the night before.

1 small box regular butterscotch pudding (NOT instant)
1 package frozen white dinner rolls (20-24 rolls)
½ c. brown sugar
1 stick butter, melted
½ c. chopped pecans or walnuts

Grease 13x9" pan. Put frozen rolls in pan and distribute evenly (I often only use 12 rolls). Pour melted butter evenly over rolls. Mix pudding powder, sugar and nuts in small bowl. Sprinkle evenly over rolls. Place in cold oven overnight. Bake in the morning for 30 minutes at 350º. When rolls come from oven, immediately turn out onto cookie sheet.


Chocolate Shortbread

1 c. butter
1/3 c. unsweetened cocoa
2/3 c. powdered sugar
dash salt
1½ c. flour

In a large mixing bowl, cream butter until light and fluffy. Blend in remaining ingredients. Chill one hour (I've successfully skipped this step before!!). Drop by rounded teaspoons 2" apart on greased cookie sheet. Bake at 300º for about 20 minutes or until the cookies are set.


Chocolate Nut Pudding

1 c. sugar, divided
1 c. flour
2 tsp. baking powder
1/8 tsp. salt
½ c. unsweetened cocoa, divided
¼ c. butter or margarine
½ c. milk
1 tsp. vanilla
½ c. brown sugar packed
1½ c. cold strong coffee (I recommend Starbucks Caffe Verona for this!!)
½ c. pecan halves
½ c. semi-sweet chocolate chips

In bowl, combine 3/4 c. sugar, flour, baking powder, salt and ¼ c. cocoa. Melt butter and add, along with the milk and vanilla, to dry ingredients. Mix just until blended. Pour into a greased 9" square baking dish.
Mix the brown sugar, remaining ¼ c. sugar and remaining ¼ c. cocoa. Sprinkle evenly over mixture in dish. Pour coffee evenly over all. Sprinkle with the pecans and chocolate chips. Bake at 350º for 40 minutes. Cool slightly and serve.
